Meatless Monday Veggie Bake In The Slow Cooker

  • Firstly make the cheese sauce. In a large pan add your butter and on a medium heat allow it to melt. Add the flour and mix well (keeping it on the heat) until the mixture resembles a roux. Add the milk a bit at a time until you have a lovely creamy white sauce. Add your cheese and your seasoning and mix well. Put to one side and allow it to cool.
  • Peel your vegetables and then give them a good clean. Dice the root vegetables and floret the broccoli and cauliflower.
  • Place your vegetables in the bottom of a slow cooker that is set to a low temperature. Season well with salt and pepper. Place your cheese sauce over it and mix well.
  • Cook for 3 hours on low.
  • After 3 hours add your coconut milk and the rest of your seasoning, stir well and leave to cook for a further 3 hours.
  • Place them into ramekins and add a little more cheese to the top and place under the grill for 10 minutes or until bubbling at the top.
  • Serve.

Notes

You can substitute the vegetables for whatever is in season and whatever you have in. We like sweet potatoes, butternut squash and pumpkins as alternatives and normally at Christmas we will serve ours with swede.
You don’t have to finish them off in the ramekins but I love the extra cheese on top and it is like the way cheese bubbles at the top when you have cheese on toast.
