Paleo Best Ever Slow Cooked Chicken Salad

  • In a mixing bowl add your honey, garlic, coconut oil and seasoning. Mix well so that it forms a sticky marinade. On a chopping board salt and pepper the chicken then add this too.
  • Place the chicken in its sauce onto a sheet of silver foil and seal well. Place in the slow cooker for 90 minutes on high. When the chicken is cooked put it to one side.
  • Mix together the ingredients of the salad dressing into the salad dish that you plan on eating out of. Place the lettuce on top, followed by sliced avocado.
  • Chop the cherry tomatoes in half and season with salt and pepper. Add them to the salad. Chop up your chicken into chunks and also add it to the salad.
  • Serve.

Notes

It has taken me a while to find lettuce that I actually like. After trying out several we have agreed on a nice mixed leaves lettuce bag. It costs a little more than a basic lettuce but lasts us a week and we actually enjoy it!
 
The beauty of slow cooking the chicken in silver foil is that it keeps its flavour and also stops going dry. If you have more time we recommend cooking it on the slow setting for 4 hours instead.
