Make the ice cream base. Using a whisk together the egg yolk along with the sugar in a bowl until they are light and fluffy. In a pan heat up the milk and cream on a medium heat and then add the vanilla essence. Pour the pan mixture into the bowl and mix well. Place in the fridge for an hour.
Add the ice cream to the ice cream maker and allow it to start the whirling process.
While the ice cream maker is busy in a food processor add your white chocolate and get it out once it resembles bread crumbs. Add it to your ice cream maker.
Leave the ice cream on for 30 minutes and when done place in containers in the freezer. Leave to cool for 2 hours and then serve.
Serve with strawberries or other fruit of your choice.
White chocolate is not as flavoursome as regular milk chocolate so it works best if it is small pieces of chocolate rather than big chunks.
