Place coconut milk in the ice cream maker and made the coconut milk into ice cream for 20 minutes. Once it had formed the ice cream I added the honey and the pineapple chunks. If it is too thick add some pineapple juice to balance it out.
Allow it to carry on for a further 25 minutes until you have smooth pineapple ice cream and place in the freezer for later.
This is all about having a creamy ice cream that is full of flavour and gives you the balance of something sweet and creamy. If it is not sweet enough go for a more sugary fruit or add more honey.
