  • Preheat your air fryer to 180c.
  • Peel and dice your butternut squash.
  • Drizzle the butternut squash in olive oil and then toss it in the leftover mixed herb seasoning.
  • Place it in the air fryer and cook for 10 minutes or until golden.
  • Serve with fresh herbs.


This air fryer recipe also works very well with other vegetables. I particularly love it with parsnips, sweet potatoes or pumpkins.
