In my version I am using garlic, olive oil, herbs, cheese and tomato. It is how I have always been taught how to make it and it’s my favourite way. The easiest way to do a bruschetta is to mince the garlic first into puree and then mix it with the olive oil. It then is so easy to spread on the bread. If you don’t have time to mince the garlic then you can buy it ready minced as puree.
