Crack the eggs into the bowl, add the vanilla essence, add the coconut oil and finally add the honey. Mix well with a hand mixer or until the mixture is smooth.
Using a blender, blend the gluten free oats into they resemble coarse breadcrumbs.
Add to the mixing bowl the banana flour, the gluten free oats and the cacao and mix well.
Using a little extra banana flour, flour the sides and bottom of your Airfryer baking pan so that the chocolate banana bread wont stick when cooked.
Pour your banana bread mixture into the baking pan and place the baking pan inside the Airfryer.
Cook for 18 minutes at 180c/360f or until a cocktail stick comes out clean when placed in the centre.
Serve with chocolate sauce.
Notes
To make the chocolate sauce – simply mix together a small bowlful of coconut milk with an extra tablespoon of the cacao powder. Then fridge it and the coconut milk will go hard enough for it to be like a really thick chocolate sauce. I recommend using banana flour.Just because unlike coconut flour or nut based flours it is flavourless. This means it is perfect for cooking with without leaving a lasting unwanted taste.Your bananas must be really soft for it to work. I tend to use them when they are no longer firm and have a bit of black on them.You don’t need a masher to do the bananas.
