Ingredients

Instructions

  • Peel the avocado and remove the stone. Peel the garlic clove and chop into quarters.
  • Add to the blender the garlic and avocado.
  • Squeeze the juice from the lime over the blender.
  • Add the green tea.
  • Add the olive oil to the blender along with the seasoning.
  • Blend until smooth.
  • Add 250ml of water to thin out the sauce so that is like a salad dressing or a cocktail sauce.
  • Decorate your cocktail glasses with the salad dressing, an extra squeeze of lime, fresh herbs and your shrimps.

Notes

This avocado shrimp cocktail recipe is for 4 people. As we are often catering for more people at Christmas, remember to adapt the recipe based on how many people you’re serving. Even though this avocado shrimp recipe is based around Christmas it can of course be used for any dinner party or weddings, christenings or family gathering.

You can also place them into little plastic cups for parties. For every four people that I serve I will empty one teabag into the avocado blender sauce. If you want your avocado sauce to be thicker, then reduce the amount of water you add by half. Or if you would like it creamy add ¼ of the usual water and then 60ml of coconut milk. Always remember to taste your avocado dressing as you go. You can always add more water to it, or more garlic to it, but you can’t take it away.
