Instant Pot Leeks Au Gratin

Easy Instant Pot Pressure Cooker Leeks Au Gratin. The easiest leeks in cheese sauce recipe that you will ever follow. Just 3 minutes and perfect for a quick dinner side for when you’re in a hurry.

  • Clean and dice your leeks. Using a sieve give them a good rinse to remove any gritty bits.
  • Place them into the bottom of your Instant Pot inner pot.
  • Add 1 cup/250ml of cold water into the bottom of your Instant Pot so that they slightly cover the leeks.
  • Place the lid on the Instant Pot, set the valve to sealing and cook for 2 minutes on manual pressure.
  • When it beeps use QPR (quick pressure release) to manually release pressure.
  • Drain the leeks and place them back into the Instant Pot.
  • Set the temperature to keep warm and add the rest of the ingredients.
  • Stir well until you have a creamy leek au gratin.

Notes

Because the leeks are already cooked you don’t want to cook them further. Therefore, use the keep warm setting for adding your cheese sauce. Because the Instant Pot is still rather warm, it works very well for warming up your other ingredients and stopping the sauce from burning.
It took me about 90 seconds to mix in the sauce and you can of course add more cheese/less cheese depending on your mood. I used some regular cheddar cheese for grating. You can use any hard cheese that you have access to.
Though in an ideal word I would use double Gloucester as it’s the best! This Instant Pot Leeks Au Gratin recipe is Syn Free on Slimming World. This is thanks to using cheese from your allowance and the fact that it is low in fat.
