Soup Maker Spinach Soup. A delicious creamy homemade spinach soup cooked in the Morphy Richards Soup Maker Machine. Loaded with spinach, potatoes and onion, making it perfect for Slimming World too.

Soup Maker Spinach Soup Ingredients:

  • 250 g Fresh Spinach
  • 2 Large Potatoes
  • 1 Large White Onion
  • 50 g Leeks
  • 3 Garlic Cloves peeled and sliced
  • 1 Tbsp Thyme
  • Salt & Pepper

Instructions

  • Wash your spinach and place into your soup maker along with the garlic, ½ the thyme and some salt and pepper. Add in 300ml of cold water.
  • Place the spinach on the chunky soup setting and cook for 5 minutes.
  • While the spinach is cooking, peel and dice the onion and potato, clean and slice the leek and put to one side.
  • When the soup maker is done with the spinach, add in the rest of the ingredients including the rest of the thyme and a little more salt and pepper. Also pour in an extra 200ml of water.
  • Place the lid on your soup maker and cook for a further 23 minutes on the chunky soup setting.
  • Semi blend when done and serve warm.

Notes

By semi blend, I mean blend it until about 75% of the soup is blended and then stir. This will give you a slightly chunky soup and gives you a better spinach soup texture. If you have a soup maker that doesn’t have a blender option, then you can use a hand blender over your soup maker instead.
The fresh spinach soaks up the water well, so you need quite a bit of liquid in this spinach soup.
You don’t have to peel the potatoes as potatoes in their skins taste so delicious and carry extra vitamins. I just thinly cube my potatoes without peeling.
