Instructions

  • Chop everything into medium chunks so that everything will cook evenly, especially if you have some large chunks of vegetables or if the roast potatoes are too big.
  • Add the leftovers into the soup maker and add 150ml of water.
  • Add the seasonings and place the lid on the soup maker. Set the soup to blended soup for 10 minutes.
  • It only needs to be on for a short time as the ingredients are already cooked and they mainly need heating up and blending.
  • Serve with some warm crusty bread.

Notes

These are the exact leftovers that we used in our leftover soup but they can be changed to save on your food waste. It is also a great way to get vegetables into those that hate veg such as your teenagers!
You can also make this soup and then freeze it for later, a great way to enjoy your roast dinner a few months from now.
