Place the red lentils and vegetables into the soup maker.
Add in 250ml of vegetable stock.
Add seasoning and stir.
Place the lid on the soup maker and cook for 26 minutes.
Blend and serve.
Notes
I like to check the amount of liquid after cooking before blending. This is because tomatoes carry a lot of water and you don’t want to end up with a watery soup. I use a quick Thai curry seasoning. That way it can be like a Red Thai Vegan Curry Soup and tastes delicious. You can swap this for your own favourite seasoning if you prefer.
