Vegetable Soup Recipe Ingredients:

  • ½ Large Onion
  • 2 Garlic Cloves
  • 2 Celery Sticks
  • 2 Large Carrots
  • 2 Parsnips
  • 1 Medium Sweet Potato
  • 1 Tsp Thyme
  • 2 Tsp Basil
  • Salt & Pepper
  • 1 Vegetable OXO Cube optional
  • 1 Tbsp Fat Free Yoghurt

Instructions

  • Clean, peel and dice your vegetables
  • Place your chopped vegetables into your soup maker.
  • Add in the seasoning along with either 500ml of veggie stock or 500ml of water.
  • Mix and place the lid on your soup maker.
  • Cook for 26 minutes and once cooked, check and blend.
  • Add in yoghurt and serve.

Notes

For vegetables you can mix and match and have a fridge raid on your leftovers. We used onion, celery, carrot, sweet potato and parsnip.
I always check my soup before blending. That is because you want to make sure there is enough liquid or not too much.
