Egg Roll In A Bowl Ingredients:
Peel and dice your onion. While you do this warm up your instant pot and place it on sauté. Once it is warm add in onion, garlic and ginger and sauté with extra virgin olive oil until the onion is soft.
Add in soy sauce to deglaze the pot along with the chicken mince. Stir until the chicken is almost cooked.
Stir and add in Chinese 5 spice and salt and pepper.
Pour in chicken stock and stir one last time.
Load the veggies on top, but don’t stir.
Place the lid on the instant pot, set the valve to sealing and cook for zero minutes.
Manually release pressure when it beeps, stir and serve.
If you are making a different mince to chicken, swap the stock flavour too. For example if using minced beef swap for beef stock.
If there is too much liquid at the bottom when you have finished cooking, drain before serving. This can happen if your mince is fatty such as using lamb mince.
Any mixed bag of cabbage works well. Bags of soup, coleslaw mix etc.
