No Drain Instant Pot Mashed Potatoes

Instructions

  • Quarter clean white potatoes and load into the instant pot. Season the potatoes well with salt.
  • Pour in vegetable stock.
  • Place the lid on the instant pot and set the valve to sealing.
  • Cook for 20 minutes and then do 5 minutes natural pressure release, prior to releasing pressure.
  • Stir with a fork to make sure all liquid has been mixed in and that you don’t need to drain your potatoes.
  • Add in other ingredients and mash with a potato masher.
  • Serve.

Notes

Because of the way the water soaks into the potatoes, no drain mash requires less butter than traditional mashed potatoes recipes. But you can add a little at a time and adjust to your taste.
You can mix and match favourite mashed potatoes ingredients. Just note that butter and milk are to be added after cooking not before.
