  • Peel and dice your potatoes into cubes.

  • Load the potatoes into the Ninja Foodi cooking pot along with 600ml/2.5 cups of vegetable stock. Season with salt, pepper, and potato seasoning. Place the lid on your Ninja pressure cooker, set the valve to sealing and cook for 15 minutes on pressure cook.

  • Do a quick pressure release and remove the lid. Add in extra seasoning, cheeses, and butter.

Notes

Easy. Because I have cooked the potatoes for 15 minutes, they hardly require any mashing. Its just a quick mash and it is done.
Ratio. Note that I have used 600ml of liquid for 2 kilos of potatoes. This ensures that you have some liquid left over at the end to make your potatoes creamy, but not too much that requires a draining.
Stock. Mashed potatoes taste much better in the pressure cooker if you use stock rather than plain water. If you don’t have any stock use water that you have flavoured with lots of seasonings such as thyme, sage, rosemary etc,
