Paleo Smoothie Ice Lollies Recipe

With four different layers of fresh fruit, honey for sweetness and coconut milk for creaminess this is heaven for both you and your kids this summer.

Ingredients

  • 50 g Fresh Blueberries
  • 50 g Fresh Mango
  • 50 g Fresh Strawberries
  • 50 g Fresh Kiwi
  • 1 Large Banana
  • 400 g Can Coconut Milk
  • 2 Tbsp Honey

Instructions

  • Clean the fruit. Peel and dice the mango and kiwis.
  • In a blender place your honey, coconut milk and banana. Blend until smooth. Add 6 ice cubes and blend again.
  • Keep ¼ of the mixture in the blender and put the rest to one side in a mixing bowl.
  • Place in the blender the blueberries with the ¼ coconut mixture and blend. Place it into the bottom of the mould.
  • Follow this up with blending the kiwi along with another ¼ of the coconut mixture. Then spoon the kiwi mixture over the blueberries.
  • Do this again with the mango and again spoon the blended mixture over the kiwi.
  • Then one final time with the strawberries.
  • Place the moulds into the freezer and allow to freeze for 6 hours.

Notes

I picked up a really good ice lolly mould set via a for sale ad via a Facebook Group. If I hadn’t found that particular one then I would have bought this one on Amazon. This recipe made a lot of mixture and fitted into 12 medium moulds as well as a bowl left for my daughter to lick out when I was done. You could change this for whatever fruit is in season. I also love mine with blackberries, raspberries and cherries.
