Instructions

  • In a mixing bowl add the sugar and butter and mix until light and fluffy with a hand mixer. Add the egg and carry on mixing until it resembles cake batter.
  • Add ½ your Greek yoghurt and beat with a fork until everything is combined. Put to one side.
  • Dice the apple keeping the skin on. Break up ½ your mini apple pies into small pieces.
  • Place into the blender your broken mini apple pies along with ½ the Greek Yoghurt and the apple. Add to it 3 ice cubes and blend until smooth.
  • Finally add to it ¾ of your cake batter and blend one last time until smooth.
  • Pour your apple pie smoothie into smoothie glasses.
  • Place the rest of the batter into a piping bag and gently create a pretty icing top onto your smoothies.
  • Serve with apple flavoured caramel sauce and the spare mini apple pies.

Notes

An optional extra is to also to use Mr Kipling for the apple pie side of things, rather than making your own homemade apple pie to go in the smoothie. It speeds it up a lot but in my opinion fresh apple pie always works best! This apple pie smoothie serves four people. We use 8 mini apple pies in the recipe – 4 for blending as part of your smoothie and the other 4 to serve with them. I used Greek yoghurt to give it the creamy texture.
You can also use double cream, fromage frais or soft cheese. If you want more of a cheesecake dessert then I suggest you add 3 eggs and replace the Greek Yoghurt with soft cheese and replace ½ the sugar with more soft cheese. My version had a more apple flavouring. If you want it to taste more apple pie like, then triple the amount of apple pie used and don’t add any extra apples. As my daughter was the only one eating it, what I did was make her one glass of it and frozen the rest for ice cream or for future smoothies.
