Instructions

  • Preheat the oven to 180c/356f and place chunks of the butter onto the baking tray. Place it in the oven for 3 minutes or until the butter has melted.
  • Place the melted butter into a mixing bowl along with the brown sugar and using a hand mixer mix until you have a creamy brownie mixture.
  • Mix in the egg, vanilla essence and the honey.
  • Break the white chocolate into small pieces.
  • Add the white chocolate, add the flour and mix in with a fork until you have a creamy blondie batter.
  • Pour the mixture out into the big tray and flatten down and make sure all the tray is covered in blondie batter.
  • Sprinkle over the top all the chocolate chips.
  • Place the tray into the oven and cook for 25 minutes at 180c/356f.
  • When cooked transfer to the cooling tray and when cool use a sharp knife to chop into blondie squares.
  • Serve.

Notes

When you remove the melted butter from the baking tray it will leave a little behind. This is good and will be the greasing of the tray without you actually needing to grease it. Then just shake it around for an even greasing.
Because it’s a big traybake, halfway through the cooking process, turn the tray around as this will allow both sides to cook evenly.
For a final taste sensation an extra option is to sprinkle some icing sugar over the top once it has cooked.
After 25 minutes check to see if they are cooked before you remove them from the oven. You can do this by putting a cocktail stick into the centre, then if it comes out clean then it is fully cooked.
