Airfryer Scampi & Chips

Delicious healthy scampi and chips. Quickly prepared and then cooked in the Airfryer. The ultimate pub fakeaway.

  • Peel and cut up your potatoes into chunky chips. Season with salt and pepper. Splash with a little olive oil. Cook for 5 minutes in the Airfryer at 180c/356f.
  • Rinse the prawns and then pat them dry with kitchen towel. Place them on your chopping board.
  • From above season your prawns with salt and pepper.
  • Place the egg in a small bowl and mix with a fork until it is the egg is beaten.
  • In the blender add your seasoning along with 80% of your gluten free oats. Blend until it resembles coarse breadcrumbs. Place it into a medium sized mixing bowl.
  • Then put the leftover gluten free oats that have not been blended into a third bowl.
  • Place your prawns into the blended oats first, then the egg, then in the blended oats again and finally in the non-blended oats.
  • Remove the chips from the Airfryer and add them to the grill pan
  • Rest the prawns in the Airfryer in the grill pan and cook for 10 minutes at 180c/356f.
  • When cooked season with fresh lemon juice and serve.

Notes

Thyme is not traditionally in scampi but it makes it taste so good and gives it a delicious European flavour.
I used one big 500g/17oz bag of uncooked king prawns. Of course you can increase or decrease depending on how many you want to make.
The non-blended oats give a lovely finish as it keeps the scampi crispy and deals with any of the oats that have fallen.
