  • Place the cup of water in the bottom of the Instant Pot and place the prawns in the steamer basket on top of the steamer shelf. Steam for 2 minutes remembering to set the valve to sealing. Peel the prawns and dress with lemon juice and salt and pepper and then put to one side.
  • In a blender add the olive oil, 1/8th of the avocado flesh, rind from the lemons, white wine vinegar and the rest of the seasonings.
  • Pour the salad dressing into the bottom of a dish, throw the salad greens over it and then toss it in your hands so that the salad is well covered in the dressing.
  • Slice and place over it small chunks of avocado and cucumber.
  • Serve with the fresh prawns.

Notes

Always give your salad greens a good clean before using them, even if you have bought a salad bag. As they can carry a lot of dirt and small insects love to live in salad greens.
