Peel the carrots and chop them into medium sized chunks.
Peel and dice the onion.
Place 200ml of water in the bottom of the soup maker and break up the OXO cube into the water.
Add the carrots and onion to the water and give it a quick stir.
Add the rest of the ingredients and set on the blended soup setting for 28 minutes.
Once it beeps serve immediately.
Notes
I find a pinch of nutmeg gives a lovely sweet flavour to the mix but it is optional in case you don’t like it. Or you could replace it with the same amount in mustard powder.If you want to be a bit more lemony also use the rind off a small lemon.
