Soup Maker Cheesy Turkey & Ale Soup

Instructions

  • Place everything in the soup maker (apart from the Greek yoghurt and a little of the cheese for sprinkling on top later).
  • Cook on the chunky soup feature for 28 minutes.
  • Remove a third of the stock so that it wont be watery when smooth.
  • Remove a handful of the turkey and chop into small cubes and put to one side.
  • Blend the remaining soup until smooth.
  • Stir in the Greek yoghurt, add the turkey chunks, add a little cheese and chives on top and serve.

Notes

You can use a chicken OXO cube to get the delicious flavour or make your own stock from scratch.
As an alternative to Greek yoghurt you can use soft cheese or add more cheddar if you prefer – but we like it as it is.
