The Ultimate Whole30 Lemon Chicken In The Slow Cooker

  • Peel and dice the potatoes into the shape of roast potatoes. Place them in the bottom of your slow cooker and place it on low. Sprinkle with salt, pepper, fresh rosemary and add the coconut butter. Finally using your hands mix well.
  • Place your chicken on your chopping board and chop one of the lemons in half and place it in the cavity of the lemon. Cover the skin of the chicken with the lemon rind, garlic puree, salt, pepper and coconut oil.
  • Place your chicken into the slow cooker and have it resting on the potatoes.
  • Cook for six hours on low. Every 2 hours using a ladel baste the chicken juices over the skin to keep the chicken nice and moist.
  • Serve.
