Start by adding your marinade ingredients into a blender and blending well until it resembles creamy apple butter.
Place your pork into a mixing bowl and rub with coconut oil and then your marinade. Cover with cling film and place in the fridge overnight.
The next morning move your pork from the bowl into your slow cooker and pour over any juices that are left behind. Season with salt, pepper, thyme and rosemary. Place on low for 7 hours or until the meat is breaking away and resembles pulled pork.
Serve with warm crusty bread or breadcakes and a glass of apple cider.
Notes
