For The Filling:

  • Cream the butter and the sugar together until it is light and fluffy. Add the egg, chocolate, coconut and vanilla essence. Add the flour and mix well.
  • Make into medium sized biscuit shapes and then roll in the oats.
  • Place in the Airfryer for 18 minutes on 180c.
  • While they are cooling make your filling. Cream the icing sugar and the butter until you have a lovely creamy mixture. Add the lemon juice and the vanilla, mix again and then put to one side.
  • When the biscuits are cool add the filling and press together so that they resemble a nice sandwich.

Notes

I use gluten free oats because I prefer the taste of them, but you can also use regular oats if you prefer.
