In a wok or frying pan add your diced onion, garlic, mustard and olive oil and cook on a medium heat for 3 minutes or until the onions have a lovely golden colour.
Add the brandy and cook it out to reduce the alcohol and so that you can have that lovely brandy flavour in your cooking.
Add the soft cheese and the milk and mix well until it forms a creamy thick sauce. It will have the same texture of double cream just without the calories.
Add the seasoning and mix for a further couple of minutes.
Serve with steak and fries.
Notes
This is how I love my pepper sauce but if you prefer you can add mushrooms, add red peppers or whatever else you like.
