Thinly slice all your potatoes making sure the skin stays on!
In a large casserole dish layer your ingredients into the dish.
Start with a layer of potatoes; follow with a bit of sliced onion and edam. Follow this up with a couple of squares of your butter to complete the layer.
Carry on doing this until you have run out of potatoes, onions, edam and butter.
Then when finished pour over your whole milk, cream and finish off with grating the cheddar cheese on top and sprinkling with salt and pepper.
Cook in the oven for 70 minutes on 220c or until the potatoes are cooked and the liquid has disappeared.
Serve.
Notes
Butter is of course clearly bad for you and to be enjoyed in moderation. If you prefer you can swap the butter for coconut milk and the cheese for cottage cheese.
