In a large pan or wok add your garlic puree and onion and sauté on a medium heat for 2-3 minutes. Add your carrot and cook for a further 2 minutes.
Add your vegetables and pork and cook for a further 5 minutes stirring regularly.
Add all your seasoning and mix well until you have a delicious sauce to go with your stir fry ingredients.
Add the pineapple, brown sugar and tomato ketchup and cook for a further 5 minutes. Toss regularly so that everything is coated in the sauce and juices.
Serve with Chinese egg noodles.
Notes
I will often use whatever vegetables I have in. But to get the sweet and sour balance right make sure you have pineapple and peppers among your mix.
