Air Fryer Rotisserie Chicken

Air Fryer Rotisserie Chicken. The most delicious way to enjoy chicken in the air fryer is to make your own homemade rotisserie chicken. This Air Fryer Rotisserie Chicken is crispy, moist and full of amazing flavours.

Instructions

  • Place all of your brine ingredients into your freezer bag. Add the whole chicken and then fill with cold water until the chicken is fully covered. Zip it up and fridge it overnight.
  • The next day when you are ready to cook your Air Fryer Rotisserie Chicken remove the chicken from the bag, remove the giblets, remove the brine stock and pat dry your whole chicken with some kitchen towel.
  • Make your chicken rub in a small bowl.
  • Place your whole chicken in the Air Fryer (breast side down) and rub ½ of the olive oil and ½ of the chicken rub into all visible skin.
  • Cook the chicken for 20 minutes at 180c/360f.
  • After 20 minutes turn over with kitchen tongs, then add the remainder of the oil and the chicken rub onto the other side of the chicken.
  • Now cook for a further 20 minutes at the same temperature.
  • Serve warm.

Notes

I have found you get the most moist rotisserie chicken when you soak it in its brine/marinade the night before. I always recommend either having a large pan or a large bowl to rest your uncooked chicken in when you place it in the fridge. It keeps it more secure from things breaking its seal.
I soaked my rotisserie chicken in a 3 litre zip bag. You just want your chicken covered so don’t need it to be bigger than this. I buy my whole chickens in bulk and then store them in the freezer. Therefore, the night before I get one out and then brine it in the same bag that I had it stored in the freezer. You can take the giblets out before soaking it in its brine.
BUT when the chicken is frozen and it’s a small chicken they are a nightmare to get out, so I wait until just before cooking. To turn over your Air Fryer Rotisserie Chicken WITHOUT burning yourself, place the tongs in the inside of the chicken and turn.
