Air Fryer Zucchini Pizza is simple to make, gives you a good cheese fix and is perfect for if you’re starving and have some spare zucchini in the bottom of the fridge, but have no idea what to do with it.

We had one of those moments in the Milner house.

Imagine being late home from grocery shopping and having not only a starving husband, but a starving 2-year-old and 4 year old.

While you unpack the groceries, you can be cooking this little cute zucchini pizzas in the air fryer, then by the time all the shopping is put away, you can stop the starving kids from screaming, by placing a delicious Zucchini Pizza Slice in their hands.

Just like if you follow Keto and want a quick snack after exercise that is loaded up with your favourite cheese, then this is for you too.

Or basically anyone that loves cheese. I am a total cheese freak, so I am sold on these Air Fryer Zucchini Pizzas straight away!

I run my zucchini cheesy pizza bites like a production line in my kitchen with the chopping board used for my prep.

Using a sharp vegetable knife I cut the zucchini into medium sized slices that are about 1-1.5cms thick.

I then get them going in the air fryer with a sprinkling of salt and pepper.

While the zucchini is warming up in the air fryer, I cut the cheese rounds for the cheesy topping.

When the air fryer beeps the zucchini is turned into zucchini double cheese pizza slices. I start with a layer of soft cheese and then the hard cheese rounds. Followed up with a sprinkling of oregano they go in for a final cooking session.

Then out they pop, and you have delicious zucchini pizza and silent kids!

You are probably wondering why I have 2 lots of cheese on the top and not just one?

Well not only do I love lots of cheese, but there is a logical explanation for it too.

As you cook in your air fryer, if the food is very light, it will blow off. This is because the air fryer is all about the air lifting up and its asking for trouble when you have thin slices of cheese on top of some zucchini which is equally thin.

If the zucchini was heavy it wouldn’t be a problem, just like you can cook air fryer hamburgers with cheese on top.

But trust me your zucchini will come out as zucchini slices and you’ll be wondering when cooked where on earth did your cheese go.

Well the zucchini pizza hack is to add a sticky layer in between which is your soft cheese. The hard cheese then sticks to it like glue and stops the air problem.

You need an air fryer grill pan to make this zucchini pizza. That is because the zucchini will go into the netting and turn your air fryer into a melted cheese mess.

  • Slice your zucchini into nine 1cm deep slices and sprinkle with salt and pepper.
  • Cook in the air fryer on your grill pan for 6 minutes at 160c/320f.
  • Cut the sliced cheese into rounds and put to one side.
  • When the air fryer beeps add a layer of soft cheese on each, push down a cheese circle and add a sprinkling of oregano.
  • Do this to all nine of your zucchini slices.
  • Cook for a further 3 minutes on 200c/400f.
  • Serve warm.

Notes

½ a medium zucchini is used and then made into 9 medium slices. If you go with thicker slices you will need to increase the cooking time but do make sure the slices are NOT thinner. When using cheese slices the average big cheese slice such as the Monterey Jack we used made 2-3 rounds. Any type of sliced cheese or cheddar will work with this recipe.
