Welcome to our herbs and spices for a summer road trip. What we wanted to share with you today, is how to mix blends and make your own herbs and spices for when you are travelling.
If you have been following RecipeThis.com recently you will know that we are going on a summer road trip. We are travelling from our home in Portugal to campsites in Portugal, Spain, France, England, The Netherlands, Belgium, Germany and Luxemburg. If not you can read all about it here.
It is going to be a real adventure for the 5 of us.
I love to cook and through our 80 days on the road I don’t want to miss out on all my favourite meals. For this reason, I am taking with me my Cobb BBQ as well as my Instant Pot for cooking all our cheap family meals.
But I hate bland food and have a thing for herbs and spices. I must have 80+ herbs and spices in my kitchen cupboard.

This hardly touched the surface as we have loads more.
Now I am going camping around Europe and I couldn’t possibly take all these herbs and spices with me. I am going to have to seriously downscale.
I decided the best way to achieve this is to make my favourite Italian herb blend. This way I can free up a lot of the jars that I would normally take. You see I live on the Mediterranean and as such a lot of the herbs and spices we use are similar.
I also realised that my Italian blend covered a lot of my everyday herb use including:

Homemade Italian Seasoning
- Place all the ingredients in a plastic storage container. Stir well with a teaspoon and then place the lid on tightly so that no air escapes.
- Use as you need it.
Instead what we are taking camping with us is as follows:
A large tub of our Italian Seasoning based on the recipe above. We will use this the most, so we used a HUGE tub and then hopefully it will last a while.
Garlic Puree plastic tub for adding a good garlic kick in our cooking. They call this lazy garlic as it produces a teaspoon of garlic instead of having to peel lots of cloves.
Chives & Parsley in small tubs. This is good for just adding a little flavour to your cooking without having to worry about big glass jars.

From this I can go on to make:
- Chinese food
- Italian food
- Thai food
- Indian food
- American food
- Barbecue food
- Cajun food
- Mexican food
- And so much more
Yet I have made some brilliant space saving and know that I can still enjoy all my favourite food, without freaking out over not having much room.
If you are travelling with your Instant Pot (like we are) then we highly recommend you do the same.
Now if you would like to create more homemade herbs and spices blends at home. Here are a few more herbs and spices suggestions:
BBQ Blend = Mix together equal amounts of brown sugar, paprika, parsley, cumin, garlic and onion powder and salt and pepper. For a large serving do 12 teaspoons of each.
Cajun Blend = Equal amounts of coriander, paprika, garlic and onion powder, oregano and salt and pepper.
Ranch Seasoning = Onion and garlic powder, chives, parsley and half the amount of dill.
