Yes, I really did say that you could make Instant Pot Cauliflower Cheese in just 2 minutes. This healthier take on the original with a cheat cheese sauce that tastes amazing but has a LOT less calories than what you’re used to, along with a single minute to cook the cauliflower.
This Instant Pot cauliflower cheese recipe is unfair. It is unfair because it has not been in my life for longer. How could I have spent all those years slaving over 2 hot pans to make it (1 pan for the cauliflower and 1 for the homemade cheese sauce) when it can just be cooked in the Instant Pot so effortlessly?
It is just wrong.
My childhood has always been about the cauliflower cheese. I spent most of my teenage years as a vegetarian. I also am allergic to nuts and hate mushrooms. Therefore, whenever I was dining out I was always looking for a cauliflower cheese as my staple meal.
At Christmas time or for Sunday dinner cauliflower cheese is always the token side dish. A bit like how often Americans have macaroni cheese. It is one of those dishes that must be eaten and enjoyed.
Serve it up with my Air Fryer Rotisserie Chicken and you have Sunday dinner planned and can just get back to your Netflix Marathon.
I also love the fact that in America they call it Cauliflower Au Gratin (just like the French do) and when I think French food it is always comfort food and a taste of luxury.
If you have never heard of Instant Pot Cauliflower Cheese or Instant Pot Cauliflower Au Gratin then you’re in for a real treat. It is basically cooked cauliflower with a cheese sauce over it. Sometimes they will add extra cheese on top or they will use a blow torch to give it a just grilled, bubbling look.

Slimming World Instant Pot Cauliflower Cheese
As we are talking the Best Of British then it doesn’t get anymore British than Slimming World. This Instant Pot cauliflower cheese recipe is Syn Free if you count your dairy as healthy extras.
You can also have it as a veggie bake and swap cauliflower for whatever other vegetables that you have in. Or go with mature cheddar and then you less cheese.
- Clean the cauliflower. Remove the root and any excess leaves and chop it into cauliflower florets.
- Place the cauliflower into your steaming basket and sit it on top of the steaming shelf (trivet) in your inner pot of your Instant Pot.
- Pour in 180ml of warm water and add your seasoning.
- Place the lid on the Instant Pot, set the valve to sealing and cook for 1 minute on manual. When it beeps use QPR (quick pressure release) to manually release pressure.
- Remove both the steaming shelf and the steamer basket (with the cauliflower still in it) and put to one side.
- Remove half the water that is left over from the bottom.
- Add the soft cheese, more salt and pepper, the majority of your cheddar cheese and set the Instant Pot to sauté. Stir with a wooden spoon until you have a creamy cheese sauce.
- Pour the cauliflower into a serving dish, add the sauce and then sprinkle with the leftover cheddar cheese.
I would consider my cauliflower to be medium. Once I had removed the root and the leaves it weighed 400g. You could load this up with any of your favourite cheeses. We did ours with cheddar cheese and Philadelphia Soft Cheese. Because you want a just cooked texture I would recommend large florets of cauliflower and to avoid making small ones.
We seasoned our cauliflower with one vegetable OXO cube and a sprinkling of salt and pepper. Because the water remains at the bottom of the Instant Pot there is no need to drain your cauliflower. I always reserve a small handful of cheese so that you can have some leftover to melt on top. If you find the Instant Pot cauliflower cheese sauce is not thick enough then add a little Greek yoghurt or quark.
Or if you find it too thick then you can add a little milk. Never leave your Instant Pot when it is on the sauté setting as it gets very hot and is easy to burn your sauce. I also get all my ingredients ready and add them when I am done.
