Right now we are done to just one pack of minced beef left in our freezer and need to go shopping for some more.

But we have loads of cauliflower and black beans in for some delicious veggie burgers. Or we have loads of whole chickens in our freezer for a delicious homemade chicken version.

But apart from our recent vegan lentil burgers we really do lack in the vegan department. So if you are a vegan apologies in advance and I will try and do more and more vegan food!

Though I think this is because I love my meat and cheese that I find it hard work to cook without them.

But as part of my Nandos range I decided to put together the best of the best vegan burger for those that don’t like lentils and want a really tasty vegan experience.

There is nothing worse than going out to eat (or eating in) and the rest of your party having all this lovely meat and you feeling like you’re missing out because you are a vegan or vegetarian.

In these Nandos Beanie Burger the star of the show will be the black beans. Just because black beans are so fantastic and are so underrated. They are used a lot in both Portuguese and Brazilian cookery and we always have quite a few cans of them in our cupboard for whenever we need them.

Then garnish up your Nandos beanie burger with all your favourite salad items, add a quality bun and a side of some sweet potato fries and then you’re ready to rock and roll.

Another great thing about these beanie burgers is the fact to spice them up you just need some of your leftover marinade. So if you are cooking loads of the traditional Peri Peri Nandos Chicken for your friends and you have a vegan or a veggie coming for dinner. Then reserve some of the marinade for them.

They will also love you for it as they will think that you have gone to such a great effort to make them feel special, when in reality it is so easy to make.

Ingredients

Instructions

  • Drain the black beans via a sieve and remove any excess liquid.
  • Place the sliced bread into a blender and make into breadcrumbs.
  • Peel and dice the garlic and onions.
  • In a mixing bowl place the breadcrumbs, all the seasoning, black beans, onions and garlic.
  • Add the lime, spoon in the marinade and mix well.
  • Make into 6 medium shaped burgers. Fridge for an hour to help them keep their shapes.
  • Cook in the Airfryer at 175c/347f for 12 minutes.
  • Serve inside bread buns with salad garnish and some homemade ketchup.

Notes

Always fridge your vegan burgers for at least an hour so that they can form a good shape.
I always use a mix of white and red onions. It gives a much better flavour and if you can get them use spring onions too.
If you like your Nandos Beanie Burger better spiced then add a little more of the marinade.
