One of my true favourites carrot and coriander soup can give a delicious flavour and will make you want to reach for more and more soup.

I love carrot. I mean I REALLY LOVE carrots. When I was little my Grandad had an allotment.

It was a small one on some communal land and there would be a few regulars always looking after their greens.

My grandad loved gardening and had a few different bits. I remember his tomatoes, peas, berries and of course you could never forget the fresh carrots.

They were amazing and I loved all the different shapes that you could get.

You see, in British supermarkets they refuse to sell vegetables that is not perfect.

That funny shaped red pepper, that short parsnip or that funny coloured yellow pepper are all rejected and in its place is all these vegetables that look absolutely perfect.

Yet here in Portugal, the none perfect make it onto the supermarket shelves and entertain us shoppers.

We always buy it and we have never understood the British culture with all that waste.

But back in the allotment days in the late 80’s I used to get excited over these funny carrots as I had never seen them anywhere else.

My Grandad had a 60 a day cigarette habit and loved a beer, but apart from that he was a dream when it came to health. He walked everywhere, rode his bike and ate a very healthy diet.

He would pass me a carrot and I would give it a quick wash and eat all of it including the skin.

It was delicious and all these years later I still think of those freshly grown vegetables.

Then after a day at the allotment with him, he would put me in the basket of his push bike and ride me home.

It was a little girls dream come true and so much fun.

I think of this whenever I am there peeling a carrot and wondering if we really need to peel them as they always taste so good!

So bring on the carrot and coriander soup in the soup maker and enjoy a classic soup that is just perfect for losing weight on Slimming World or for when you are just in the mood for some soup!

  • Peel the carrots and chop them into medium sized chunks.
  • Peel and dice the onion.
  • Place 200ml of water in the bottom of the soup maker and break up the OXO cube into the water.
  • Add the carrots and onion to the water and give it a quick stir.
  • Add the rest of the ingredients and set on the blended soup setting for 28 minutes.
  • Once it beeps serve immediately.


I find a pinch of nutmeg gives a lovely sweet flavour to the mix but it is optional in case you don’t like it. Or you could replace it with the same amount in mustard powder.
If you want to be a bit more lemony also use the rind off a small lemon.
