This Slimming World Frittata recipe is so special. That is because it has been transformed to make a delicious Slimming World Frittata Pizza.
Let me tell you a little bit about the history of my Slimming World Frittata Pizza, before I dive in and show you how to make it. I was in the kitchen making a frittata for dinner and I broke the biggest rule when it comes to making frittatas and that was using courgette as one of the vegetables.
You see, its important that you avoid it because it is very high water and can ruin your frittata and turn it into mush, then it takes forever to set and then you’re depressed because you have ruined dinner!
Well I was short on vegetables and had to use the courgettes and just as expected my vegetables were way too watery. So, my plan B was to rescue them and see what I could make.
Well I squeezed out all the extra moisture and before I knew it, what I looked down on looked like a vegetable pizza crust and it was just asking for loads of cheese and other pizza toppings to be added on top.
So, that is EXACTLY what I did!
It also got me thinking that my Slimming World Frittata Pizza was also perfect for when you have leftovers and with today being leftover Tuesday, I just had to share it on this sunny day in May.
We always buy our vegetables when they are on deals. If there is 25% off broccoli, a 50% discount in carrots or if cauliflower is just over 1 Euro a Kilo. This means that some weeks we have a LOT of spare vegetables in and using them on a Slimming World Frittata Pizza is the BEST.
Just use any vegetables that are NOT high in water. So, no tomatoes, no courgettes and no pumpkin.
Also, don’t use vegetables that DON’T mash very well. So, avoid leeks and peppers.
Potatoes, broccoli, carrots, mushrooms, cauliflower, swede, parsnips and butternut squash work BEST.
Of course, you don’t need all these vegetables in your Slimming World Frittata Pizza, just enough to make a base. I just go with whatever I have spare, that needs using up.
In this Slimming World Frittata Pizza, I have used the following spare vegetables:
- Sweet Potato
Enough for a nice mix in flavour and perfect for throwing it all in together.
I also used my Instant Pot Pressure Cooker to cook the vegetables. This speeds it up and then you have one big pot for cooking them in. I have both the 6 litre and the 8 litre and its amazing for quick soups, vegetables, whole chickens, pasta dishes and even for making steamed puddings with.Slimming World #Frittata #Pizza #Recipe @recipe_thisClick To Tweet
Place your pizza dough ball into a bowl and mix it with an egg, salt, pepper and oregano. Bind it together so that you have a soft pizza dough ball.
Place it onto your pizza tray and using your hands, push it down until it covers your pizza tray and is not too thin and not too thick.
Add your grated cheese layer, a layer of sliced tomatoes, your ½ teaspoons of soft cheese, salt and pepper and a sprinkling of basil.
Cook in the oven for 30 minutes at 180c/360f.
I used a mixture of broccoli, carrots, cauliflower and sweet potatoes to make my Slimming World Frittata Pizza Base. When you measured it, it worked out at a huge pizza dough ball (see the image further up) and we used the equivalent of a large broccoli, a large cauliflower, a handful of carrots and 2 large sweet potatoes.
We then cooked them in our Instant Pot until they were mushy. We then mashed them and after this placed them in a clean pillow case, ringed out the excess water until it was like a firm dough ball. I love soft cheese on my pizza. I first had it like that at Pizza Hut and the cheese tastes amazing like that.
I just use ½ a teaspoon lumps of cheese until I have used up my 75g allowance. I always make sure I add extra salt to the sliced tomatoes as tomatoes always need their salt!
Syn Free Slimming World Frittata Pizza
Okay so how do you keep a delicious cheesy pizza Syn Free? Well we make a pizza big enough for four people and then share the healthy extra A cheese allowance between you all.
- 120g Cheddar
- 75g Soft Cheese
This is the same as 4 allowances on healthy extra A, so if you are making the pizza for the four of you, then this Slimming World Frittata Pizza works out at one healthy extra A per person and ZERO syns.
